She has participated in the establishment of the doctoral program at the Research Center for Food and Development and taught several courses at Master and Doctoral level since 1993. Major advisor for 2 Ph.D. students, 10 M.S., and 10 Undergraduate. In the last 7 years, she has served as Head of the Fruits and Vegetables Technology Department. Dr. Islas-Rubio´s work has impact in research, teaching, industry, service and international activities. Recently, Dr. Islas-Rubio has published her research work at journals such as Plant Foods for Human Nutrition, Carbohydrate Polymers, Foods, Journal of Functional Foods, Materials, Food Funct., Journal of Cereal Science, among others.
